Recipe: Grilled Lemon Chicken Salad

It's gluten-free, dairy-free, low-carb, and packed with high-quality protein, making it an excellent choice for meal prep or a satisfying dinner. Here's how you can prepare this nutritious dish that serves four.

Ingredients (serves 4):

  • Lemons: 2, halved

  • Oregano: 1 ½ tbsp.

  • Olive Oil: 1 ½ tbsp.

  • Garlic: 2 tsp., minced

  • Chicken Breasts: 4 skinless, boneless (approximately 5 oz. or 150g each)

  • Asparagus: 8 oz. (220g)

  • White Onions: 8, trimmed

  • Coconut Oil: 1 tsp.

  • White Wine Vinegar: 1 ½ tbsp.

  • Rocket: 4 oz. 120g

  • Coriander: A handful, chopped

Here’s how to make it:

  1. Heat your oven to 200°C.

  2. Grate the rind from the lemons to yield 2 teaspoons of zest. Combine the zest, oregano, olive oil, and minced garlic in a large mixing bowl. Add the chicken breasts, season with salt and pepper, and toss to ensure they are well-coated.

  3. Arrange the chicken breasts and lemon halves on a baking tray. Place in the preheated oven and bake for 20-25 minutes, or until the chicken is thoroughly cooked and has a golden-brown exterior.

  4. While the chicken is baking, heat the coconut oil in a small pan over medium heat. Add the asparagus and green onions, sautéing for 3-4 minutes until tender. Rotate them occasionally to ensure even cooking.

  5. Once cooked, cut the asparagus and onions into 2-inch pieces.

  6. Spread the rocket evenly across four plates. Top each with equal amounts of the chopped asparagus and onions.

  7. Drizzle each serving with white wine vinegar and season further with salt and pepper as needed.

  8. Slice the cooled chicken into strips and arrange on the salads. Place half of a roasted lemon on each plate to squeeze over the chicken as desired.
