Ingredients (serves 2):

  • Jasmine Rice: 95g, uncooked

  • Chicken Breast: 2 pieces, 225g each, cut into 1-inch (2cm) cubes

  • Fish Sauce: 5 tbsp (such as nuoc mam or nam pla)

  • Freshly Ground Black Pepper: 1 tbsp

  • Sugar: 2 tbsp

  • Coconut Oil: 2 tbsp

  • Red Onion: 1, diced

  • Lemongrass: 5 tbsp, minced

  • Thai Chillies: 2, seeds removed and minced (optional for heat)

  • Turmeric: 1 tbsp

  • Spring Onion: 1 stalk, thinly sliced

What you need to do:

  1. Cook the Rice:

    • Begin by cooking the jasmine rice according to the package instructions. Keep it warm while you prepare the rest of the dish.

  2. Marinate the Chicken:

    • In a large bowl, mix the chicken cubes with fish sauce, freshly ground black pepper, and 1 tablespoon of sugar. Ensure the chicken is well-coated with the marinade. Set aside to let the flavours meld.

  3. Prepare the Caramelised Onion:

    • Heat a small pot over low heat. Add coconut oil and the remaining 1 tablespoon of sugar. Cook until the mixture turns a deep golden caramel colour, about 90 seconds, watching closely to avoid burning.

    • Add the diced red onion to the caramelised sugar. Cook for about 20 seconds or until the onion begins to soften. Remove from heat and set aside.

  4. Stir-Fry the Chicken:

    • Heat a wok or a large frying pan over high heat. Add the marinated chicken and the caramelized onion mixture. Stir-fry for about 5 minutes or until the chicken starts to turn golden brown.

  5. Add Aromatic Ingredients:

    • Incorporate the minced lemongrass, Thai chillies (if using), and turmeric into the wok. Continue to cook for another 3-5 minutes, or until the chicken is thoroughly cooked through.

  6. Final Touches:

    • Once the chicken is cooked, toss in the thinly sliced green onion for a fresh burst of flavour.

  7. Serve:

    • Serve the hot stir-fried chicken over the warm jasmine rice, ensuring to scoop any leftover juices over the top for extra flavour.

This Southeast Asian Chicken Stir-Fry is not just a meal; it’s an experience. It offers a perfect blend of sweet, savory, and spicy flavors that are characteristic of the region's cuisine.
