Recipe: Baked Chicken with Lemon-Chive Sauce

Ingredients (serves 2):
For the Chicken:
Chicken Breasts: 300g, boneless and skinless
Egg: 1 large
Olive Oil: 2 tbsp, divided
Paprika: 1 tbsp
Garlic Powder: 1 tbsp
All-Purpose Flour: 20g
Breadcrumbs: 60g
For the Sauce:
Chives: 2 tbsp, chopped
Greek Yogurt: 100g
Lemon: ½, juice and zest
What you need to do:
Preheat your oven to 200°C (392°F). Line a baking sheet with baking paper to prevent sticking.
Cut the chicken breasts into bite-sized strips for quick cooking.
In a bowl, crack the egg and whisk it with 1 tablespoon of olive oil, paprika, garlic powder, and a pinch of salt and pepper. This spice mixture will add a flavorful coating to the chicken.
Cover the chicken strips first in flour, ensuring a light coat. Dip them into the egg mixture, then coat thoroughly with breadcrumbs.
Arrange the breaded chicken strips on the prepared baking sheet. Drizzle them with the remaining tablespoon of olive oil to help them brown nicely.
Bake in the preheated oven for 7 minutes, then flip the chicken pieces and continue baking for an additional 10 minutes or until golden brown and fully cooked.
While the chicken is baking, prepare the sauce. In a bowl, combine the chopped chives, Greek yoghurt, lemon juice, and half of the lemon zest. Season with salt and pepper to taste and whisk until smooth.
Serve the crispy baked chicken hot from the oven with the refreshing lemon-chive sauce on the side for dipping.
