Recipe: Salmon Quinoa Salad

Ingredients (serves 2):
Quinoa: 90g
Salmon Fillets: 340g
Red Onion: 1 small, sliced
Lemon Juice: 4 tbsp, divided
Cherry Tomatoes: 300g, halved
Cucumber: ½, sliced
Coriander: 2 tbsp, chopped
Salt & Pepper: to taste
What you need to do:
Prepare the Quinoa: Cook the quinoa according to the package instructions. Once cooked, drain any excess water and set aside to cool.
Bake the Salmon:
Preheat your oven to 190°C (374°F). Line a small baking dish with parchment paper for easy cleanup.
Place the salmon fillets in the prepared dish. Top with sliced red onion and drizzle with 2 tablespoons of lemon juice.
