Recipe: Chicken & Mango Stir Fry

What you need to do:

  1. Prepare the Ingredients:

    • Season the chicken strips with salt and pepper, then lightly coat them with flour to help thicken the sauce later.

    • Cut and prepare the mango, peppers, onion, chilli pepper, and ginger as described.

  2. Make the Sauce:

    • In a small bowl, combine all the sauce ingredients. Adjust the flavour according to your taste, balancing sweetness with acidity and saltiness.

  3. Cook Vegetables:

    • Heat one tablespoon of coconut oil in a wok or large pan over high heat.

    • Add the peppers, onions, chilli, garlic, and ginger. Stir-fry for about 3 minutes until the vegetables start to soften.

    • Add the mango strips, stir well, and cook for another 2 minutes. Remove from the pan and set aside.

  4. Cook Chicken:

    • In the same pan, add the remaining tablespoon of coconut oil.

    • Fry the coated chicken strips for about 3 minutes or until they are golden and nearly cooked through.

  5. Combine and Serve:

    • Return the mango and vegetables to the pan with the chicken.

    • Pour in the prepared sauce, mixing well to coat all the ingredients. Cook for an additional 2 minutes, or until the sauce has thickened and everything is heated through.

    • Serve hot over a bed of rice (remember, rice is not included in the nutritional calculation).
