Ingredients (serves 4):
Egg Noodles: 160g
Beef Tenderloin: 200g, thinly sliced
Sesame Oil: 1 tbsp.
Garlic: 1 clove, minced
Ginger: 1 tbsp., grated
Leek: ½, mostly white parts, sliced
Red Pepper: 1, sliced
Mushrooms: 3, sliced
Tamari: 3 tbsp.
Spring Onions: 2 tbsp., chopped
White Pepper: A pinch (for seasoning)
What you need to do:
Prepare the Noodles:
Begin by cooking the egg noodles according to the package directions. Once cooked, drain and set aside.
Cook the Beef:
Heat the sesame oil in a wok or large frying pan over medium heat. Once hot, add the minced garlic and grated ginger, cooking for about 1 minute until fragrant.
Increase the heat slightly and add the sliced beef tenderloin to the wok. Stir-fry the beef for about 2 minutes, just until it starts to brown.
Add the Vegetables:
To the beef, add the sliced leeks, red pepper, and mushrooms. Continue to stir-fry, mixing frequently, for about 5 minutes or until the vegetables begin to soften and caramelize.
Combine and Season:
Add the cooked noodles to the wok with the beef and vegetables. Season the mixture with a pinch of white pepper and sugar to enhance the flavors.
Pour in the tamari and 2 tablespoons of water to deglaze the pan and create a light sauce. Stir well to combine all the ingredients and cook for an additional 2 minutes to ensure everything is heated through and coated in the sauce.
