What you need to do:

  1. Prepare the Noodles:

    • Begin by cooking the egg noodles according to the package directions. Once cooked, drain and set aside.

  2. Cook the Beef:

    • Heat the sesame oil in a wok or large frying pan over medium heat. Once hot, add the minced garlic and grated ginger, cooking for about 1 minute until fragrant.

    • Increase the heat slightly and add the sliced beef tenderloin to the wok. Stir-fry the beef for about 2 minutes, just until it starts to brown.

  3. Add the Vegetables:

    • To the beef, add the sliced leeks, red pepper, and mushrooms. Continue to stir-fry, mixing frequently, for about 5 minutes or until the vegetables begin to soften and caramelize.

  4. Combine and Season:

    • Add the cooked noodles to the wok with the beef and vegetables. Season the mixture with a pinch of white pepper and sugar to enhance the flavors.

    • Pour in the tamari and 2 tablespoons of water to deglaze the pan and create a light sauce. Stir well to combine all the ingredients and cook for an additional 2 minutes to ensure everything is heated through and coated in the sauce.

  5. Serve:

    • Divide the noodle stir-fry among four dishes. Garnish each serving with freshly chopped spring onions for a burst of color and freshness.
