Recipe: Slow Cooker Chicken Fajitas

This is a great one for all the family, super easy to make and everyone loves it!

The ingredients are for 8 servings so share with friends and family, pop some in the freezer or meal prep for the week ahead and serve with anything from salad, to rice, to wraps!

Each serving has 28g of protein and is low in fat (3g) and carbs (12g).

183 calories per serving, 28g of protein, 12g of carbohydrate and 3g of fat.

Ingredients (serves 8):

  • 14 oz. (400g) salmon fillet, skin removed

  • 1 tsp. honey

  • 2 tbsp. soy sauce

  • 2 tbsp. olive oil

  • 4 slices of lemon + 2 tbsp. of juice

  • ⅞ cup (200g) jasmine rice

  • 1 cup (150g) cherry tomatoes

  • handful of basil leaves

  • 4 tbsp. natural yoghurt, 0% fat

Spices:

  • 2 tsp. paprika

  • ½ tsp. curry

  • 1 tsp. oregano

  • pinch of chilli flakes

Here’s how to make it:

1. Place half the sliced peppers and onion in the slow cooker.

2. ⁠Layer the chicken and coat with honey, olive oil, lime juice, all the seasonings and chopped tomatoes.

3. ⁠Lastly, add the remaining peppers and onions and cook for 4 hours on high.

4. ⁠Remove the chicken and shred it with a fork, then return to the slow-cooker.

5. ⁠Mix well and cook for another 10 mins. on low.

6. ⁠Assemble fajitas and enjoy.

Suggested serving (not included in nutrition info): tortillas, cream, avocado, coriander.
